Oh "Yas" it's pumpkin spice season! For those of us who love this time of year and pumpkin spice everything, you will love these pumpkin spice protein waffles.
These waffles have a light, crispy and fluffy texture thanks to a low-carb combination of Greek yogurt and coconut flour. Like your favorite latte or Thanksgiving pie, they taste like what pumpkin spice season should taste like :)
These are way healthier and keto/macro friendly than traditional waffles and satisfy that itch for Fall Pumpkin Spice! These are great as a protein rich snack or even a meal.
You can also make these into pancakes by adding a little water to the batter and add to frying pan and cook like traditional pancakes.
Macros per waffle:
11.5 gms protein
1.1 gms fat
3.5 gms net carbs
1 scoop (30gms) KetoGenics Pumpkin Spice Glazed Donut Protein Powder
30 gm coconut flour
15 gm Erythritol sweetener
1 tsp Pumpkin Pie Spice
100 gm Egg Whites
100 ml (less than ½ cup) Cashew milk (or similar milk or milk replacement)
30 gm 0% Non Fat Greek yogurt
Combine all ingredients and mix well.
Bake for 5-10 minutes (or when timer beeps) in a greased waffle maker.
Can top off the wafflers with some protein pudding/frosting by using 75g Greek yogurt + 1 scoop (30g) KetoGenics Pumpkin Spice Glazed Donut Protein Powder to make the topping.
