So I am a huge chocolate fan BUT not vegetables! So why would I like zucchini as part of a chocolate bread recipe? Let me explain...
Zucchini is often added as an ingredient to bread for a few reasons. First, zucchini adds moisture to the bread, which can help to keep it from drying out and becoming stale. Zucchini also has a very mild flavor, so it won't overpower the other ingredients in the bread. It adds a wonderful texture and moistness bulk to baked goods.
After baking a cake with shredded zucchini you wonβt be able to taste the zucchini.... you won't taste anything but chocolate bread!
1.5 scoops (50gms) Ketogenics Chocolate Cereal Milk Iso-Whey (though any flavor will work)
1 medium sized zucchini
2 large eggs
1 tsp vanilla extract
77 gms (1/3 cup) Greek Yogurt plain
23 gms smooth cottage cheese
31 gms coconut flour
44 gms Swerve (Erythritol) confectioners (powdered sugar replacement)
21 gms cocoa powder
5 gms instant coffee
1 tsp (4.6gms) baking soda
1 tsp/(4.6gms) baking powder
1/2 tsp (3gms) salt
Preheat oven to 350F
Shred zucchini & squeeze zucchini over a bowl to remove excess moisture.
Mix all wet ingredients together well
Mix all dry ingredients together well
Combine wet and dry ingredients and mix well
Pour batter into a parchment lined bread pan
Bake for 35 min.
Calories 75, Protein 8.7 grams, Fat 2 grams, Carbs 3 grams
