Protein Sparing Modified Fasting Bread Recipe
The original PSMF Bread Recipe called "Doughtein" had been around since the 1990s. A very simple recipe that produces a bread or base for all sorts of recipes. Doughtein can be made as a bread, pizza crust, rolls, muffin etc. Various low carb dieters have renamed the recipe to match up with the diet of the same name. The Protein Sparing Modified Fasting Bread recipe uses the original Doughtein Bread Recipe with some tweaks to produce...um... bread! :).
Unfortunately most of the Protein Sparing Modified Fasting Bread recipes on the web have a odd texture and often eggy taste that most people do not enjoy. The bread doesn't seem to rise very well either. These problems are usually result of using the inferior egg white protein powder in the recipe.
After decades of creating low carb recipes, we find that whey protein or even a whey/casein blend is the absolute perfect protein powder for making low carb, keto friendly bread. Our Ketogenics version of this bread recipe is the best low carb bread recipe that tastes as good as the typical store brought Wonder Bread, whole wheat, store brand etc bread. It is truly amazing for the macros and ingredients!
480g liquid egg whites
60g Flour Replacement (recipe here). Or other low carb flour type substitute
30g psyllium husks
20g erythritol (Swerve)
1 tsp pink salt
1 tsp xanthan gum
1 tsp baking powder
Beat egg whites to soft peaks
Mix all dry ingredients well and add to egg whites gradually using a hand held mixer.
Pour into a lined loaf pan and bake @350 F for about 45-50 minutes. Let cool. Refrigerate or freeze.
Slice and enjoy :)

Perhaps the best protein bread recipe out there – and I’ve tried almost all of them. It’s one thing to be low calorie but if it tastes Ike cardboard what’s the point? This recipe is legit excellent and the versatility of it on top of the fact that it actually tastes delicious makes this a 5 star recipe.
